My eats came from last Wednesday, and for some reason, I was hungry, hungry, hungry! Here’s what was on the menu for the day…
Breakfast: The usual (1/4 cup steel cut oats, 1 Tbsp. chia seed, unsweetened vanilla almond milk, and nut butter!), coffee on the side
Lunch: By the time lunch rolled around, I enjoyed some leftover Roasted Spaghetti Squash with chicken sausage and a big salad on the side. I was so full by the end!
Dinner: Ah, dinner. I stole this photo from lunch last week, but I had the same thing for dinner…a steamed sweet potato toped with black beans, peppers, tomatoes, fresh avocado, salsa, and a little cheese. Delicious!
And, let’s not forget about snacks!
Morning snack: Honeycrisp Apple
Afternoon snack: Mixed nuts (peanuts, almonds, cashews, and walnuts) with raisins
Munchies before dinner: Multi-grain crackers from Crunchmasters — I cannot say enough good things about these babies!
Evening snack: Banana, melted in microwave, and topped with a few dark chocolate chips
