Makin’ banana pancakes

What’s better than starting off a Sunday morning with warm, delicious pancakes?

Nothing is! Especially when they’re made with sweet bananas, freshly-ground oat flour, and topped off with homemade cashew butter and shredded coconut. Mmmm!

Banana Oat Flour Pancakes
Serves 3 (makes about 9 small pancakes)

  • 2 large bananas, mashed 
  • 2 Tbsp. coconut oil, melted
  • 1 Tbsp. lemon juice
  • 1 whole egg
  • 2 egg whites
  • 1 c. oat flour (ground oats)
  • 1/4 c. ground flax meal
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • A few shakes cinnamon
  1. In a large bowl, mash your bananas. Add your coconut oil and lemon juice and continue to mix until well blended. 
  2. Next add one egg and two egg whites and blend with banana mixture.
  3. In another large bowl, add together all of your dry ingredients (oat flour, flax meal, baking powder, salt, and cinnamon).
  4. Make a well in the middle of your dry ingredients and pour in your wet ingredients. Mix with a large spoon, being careful not to overmix.
  5. For best results, let batter sit for ten minutes and allow it to thicken.
  6. Spray a pre-heated griddle (or skillet) with cooking spray and begin to spoon pancake batter on to griddle. You may have to use a spatula to thin out batter (it’ll be very thick).
  7. Flip once until browned on both sides.
  8. Top with your favorite toppings — I love mine with some nut butter, shredded coconut, and a drizzle of maple agave syrup!

How to “level up” this recipe:

  • Add some fruit to top off your pancakes; I think these would be great with fresh strawberries or even a blueberry compote. 

How to “level down” this recipe:

  • No oat flour on hand? Substitute a whole wheat or white flour instead (although remember that your pancakes will no longer be gluten free). 
  • Instead of the coconut oil, you can add in regular canola oil or melted butter.
